Have you ever agreed to make and take cookies to a party…and then forgot about said promise…until the night before?

Maybe it’s just me.

Or, maybe your kids didn’t think to mention that they promised you would bring cookies to the party…until the night before?

Again, me.

Let me just say that I nipped that in the bud real quick!  My kids learned early not to promise someone else that I would do anything without talking to me first! 😀

Still, I needed a go-to cookie.  Because:  life.

One that tastes wonderful, uses ingredients I have right now in my pantry and fridge.  And quick.  It had to be quick.  Because:  tired.

Thankfully, I was able to use a recipe my mama has made for years and years.

My 3 favorite things about these cookies.

  1. They’re delicious.
  2. I have all the ingredients in my house RIGHT NOW.
  3. They only require about 10 minutes of ME in the kitchen.

That, I say, is a keeper.

Chocolate Oatmeal Drop Cookies

On the stovetop:  2 cups sugar, 1/4 cup Unsweetened cocoa powder, 1/4 cup (1/2 a stick) butter/margarine, and 1/2 cup milk.

Boil 1 minute.  Remove from heat and add:  3 cups oatmeal, 1/2 cup peanut butter, and 1 tsp. vanilla extract.

This is the oatmeal I use:

Drop on waxed paper and let cool.

So here’s the kennedyfamfive way to make this {that works for us}.

I just realized that when I wrote about our favorite comfort food, I lied.

Whoops!  Not on purpose…just forgot something about THIS recipe…

And that is:  I said I never measure out everything before I start…you know, like on the cooking shows…except with macaroni and cheese.

I completely forgot about these when I wrote that.

It actually saves lots of time with these cookies.  And is pretty necessary in Step 3…which is like five minutes after you start.  🙂

So, Step 1, measure out everything.

Fun fact:  I am not a homemaker.  That’s a full stick of butter in the photo above, because apparently I can’t read.  The recipe calls for 1/2 a stick.

Facepalm.

The last three ingredients, I put in my biggest mixing bowl.

Step 2:  Turn on the stove top and get it to boiling.  I have no patience.  I put it on high and stir like crazy.

Step 3:  Pour immediately over the oatmeal/peanut butter/vanilla extract combo.BUSY MOMS: THIS IS YOUR GO-TO COOKIE from kennedyfamfive.com

Stir everything together with a spatula.  This is so much easier in a big mixing bowl.  And it’s really hot, so even more reason to want no spills.

Step 4:  Finally, spoon out the cookies onto waxed paper.

BUSY MOMS: THIS IS YOUR GO-TO COOKIE from kennedyfamfive.comOnce they’ve cooled, I keep them in the fridge until “serving”–if we are taking them to church or something.  They don’t have to be refrigerated…I just think they last longer that way.

Otherwise, I just put the ones we haven’t already eaten into a ziploc bag or plastic container.
