Dinner in the oven in 5 minutes? Yep, it can be done!

Food bloggers have no worries about me becoming competition for them, lol. I’m not about making it beautiful…but I am about finding recipes that

  1. taste fantastic
  2. require a small amount of time in the kitchen
  3. easy cleanup is a bonus

Here’s the recipe for Lipton Chicken and Rice:

1 cup plain white rice, uncooked

Approximately 1 lb. chicken (boneless, skinless) cut into 1-2 inch chunks

1 can cream of chicken soup

You are using money-saving apps on groceries, right?? I use the Walmart app and Ibotta every week.🥳

1 envelope Lipton onion soup mix

Spray casserole dish with cooking spray.

Pour rice in first.

Place chicken over the rice.

Using a whisk in a separate mixing bowl, combine the cream of chicken soup, the Lipton onion soup mix, and a can and a half of water.

Pour soup mixture over the chicken.

Cover.

Bake at 375° for 70 minutes.

Done!!😁

ProTips

Make sure that the liquid has mostly soaked up so that your rice isn’t crunchy! Yuck!

Obvs, make sure that the chicken is done. This is a very forgiving dish…when in doubt, cook it longer.

Overcooking is way better than undercooking this meal. Again, crunchy rice.😝

Optional: Salt the chicken. If you cut it into smaller chunks, you probably won’t need to do this step.

Sides

Green beans are our go-to vegetable and have been for 20 years! They’re great with this chicken and rice.

Keep it super simple…a salad, fresh fruit.

Bread is always nice–we like to be fancy sometimes and have crescent rolls with this meal.😂

They really are delicious with it and me telling you that feels “fancy” is a strong indication of my kitchen prowess.
